WHere is an easy take on a beverage featured on the seasonal drinks list. It's a batch premix which is bursting with essence of a Christmas time, which makes it ideal for your festive gathering. Any leftover cordial to use in morning drinks, desserts, or to make another batch of this cocktail.

Ingredients for the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Instructions
For the Cordial: Put all the ingredients into a pan, bring to a simmer, stirring to dissolve. Then, turn off the burner allowing it to reach room temperature fully. Pour into a sterilised bottle, cap it and store in the refrigerator, where it will keep for about four weeks.
To make Batch Mix: Mix every liquid ingredients into one sizeable container, let it rest for an hour, then strain preferably using a fine cloth, making it perfectly clear.
To serve: Add 85ml of the cocktail base into your stirring glass filled with ice, and agitate carefully for about 60 seconds to cool it down. Pour into a frosted cocktail glass or a similar vessel, decorate with a few cranberries and complete it with a brief mist of the essential oil over the drink.
